Let’s start preparing this tasty dogfish recipe in anchovy and onion sauce.

First of all, we remove the skin from the fish; let’s wash it, dry it well and cut it into regular slices. Let’s salt it and pass it in the flour.
We take a large saucepan, add a little extra virgin olive oil and arrange the slices in a single layer; then let them brown slightly.

Meanwhile, prepare the onions by cleaning and chopping them finely. Then take a large pan and fry the onions in oil; add the anchovy, a sprig of chopped parsley and a pinch of salt. We add the wine and let the sauce reduce over moderate heat. Dilute it with half a glass of water before pouring it on the slices of dogfish; leave everything on the stove for a few more minutes.

We move our dogfish in anchovy and onion sauce onto a serving dish and serve hot.
