As a first step to prepare the tomato puree, wash the tomatoes, cut them in half trying to remove the seeds, squeeze them and put them in a steel saucepan.
Then add the garlic, bay leaf, salt and sugar. Let’s boil everything for about ten minutes; then let it drain in a sieve for an hour.
Then chop the vegetables and stew them for about ten minutes with 2 tablespoons of oil, salt and a little water.
Finally, we pass the tomatoes and vegetables through a vegetable mill, mix everything together and fill the jars; put some basil leaves and 3 tablespoons of oil in each jar. We close and sterilize everything for about thirty minutes.
The tomato puree is now ready to be used.
