As a first step to prepare our soft mascarpone donut, melt the butter in the microwave, or in a bain-marie, and let it cool. We then sift the flour with yeast; we grease and flour the mold.

Using the planetary mixer or the high-speed electric whisk, whip the whole eggs with the sugar until they are frothy and fluffy. Add the mascarpone, melted butter and lemon zest after lowering the speed to a minimum.

At this point, add the flour in spoonfuls to the dough, alternating the milk until you get a creamy and homogeneous mixture.

We pour everything into the mold and bake in a preheated oven at 180 degrees for about 50 minutes.

To check the cooking it is always useful to do the toothpick test (if when we pierce the center of the cake the toothpick comes out dry we can take the donut out of the oven); then let it cool for about 15 minutes.

Finally, we turn out our soft mascarpone donut with the help of a wire rack to let it cool completely. We serve the donut with a sprinkling of powdered sugar.
