First of all to prepare the shrimps in spicy sweet sauce we must prepare the sauce. We wash and remove the seeds and stems from the green and red chillies and cut them into chunks.

Take a frying pan and brown the sliced ​​onion and garlic with 2 tablespoons of oil until lightly browned; in a second pan, sauté the peppers for 2-3 minutes.

Put the previously stewed vegetables in a blender jug ​​and blend until a compact and homogeneous cream is obtained.

Then add the lime juice, the fish sauce and the soy sauce, the shallot and the coriander, previously chopped, whisk for a few seconds, to mix everything well. If the sauce is too thick, dilute it with a little boiling water, then, collect it and put it in a gravy boat or bowl.

We remove the heads and shells of the prawns, then remove the gut, which is on the back, with the help of a toothpick. We open the eggs and beat them lightly; we immerse the tails of the prawns, well cleaned, and then pass them in the breadcrumbs.

Meanwhile, heat abundant oil in a pan and when it has reached the right temperature, about 170 ° C, fry the shrimps a few at a time. When they are golden, drain them with the help of a slotted spoon and place them on absorbent paper to remove excess grease.

Our shrimps in spicy sweet sauce are now ready to be served accompanied with the chilli sauce and sliced ​​lime.
