As a first step to prepare the potato gnocchi, boil the potatoes in abundant salted water. It is preferable to put them in water when it is still cold.

When the potatoes are cooked, peel them immediately and pass them through a potato masher.

Let them cool down; then add the flours and prepare the pasta for the gnocchi, working it accurately and energetically but not too much.

We then form small cylinders that we will cut into chunks and turn on the prongs of a fork.

Finally, cook our potato gnocchi in abundant salted water and drain them at the first hint of boiling using a slotted spoon.

We can serve the dish with tomato sauce and parmesan or with a meat sauce or a cream of cheese.
