As a first step to prepare the zucchini penne, clean the onion and slice it finely. Then wash the courgettes and cut them into chunks.
Over low heat, simmer the onion with the oil and a tablespoon of water for about 4 minutes. Then add the courgettes and, stirring, cook over high heat for about 10 minutes.
We mix the eggs with the parmesan, previously grated, until a creamy mixture is obtained; let’s salt and pepper.

To make the egg cream even tastier, you can perfume it, before seasoning the pasta, with some finely chopped strands of chives.
