First of all, to prepare the mediterranean sauce, we peel the fresh tomatoes; therefore, let’s deprive them of the seeds and pass them in a vegetable mill.

In a pan, brown the garlic, cut in half, with the oil. Then add the tomatoes, sugar, salt and let it cook for about 15 minutes.

About 2 minutes before the end, add the fresh oregano, previously chopped; turn off everything, remove the garlic, add the remaining oil. Season with salt and pepper.
