To prepare our delicious homemade ketchup, start by thinly slicing the onions after cleaning them. Heat the olive oil in a saucepan and cook the onions for about 5 minutes, stirring occasionally to prevent sticking.
Next, add the tomato puree, ground ginger, hot paprika, finely chopped cloves, flour, red wine vinegar, sugar, and a pinch of salt.
Season the mixture with a little freshly grated nutmeg and mix thoroughly.
Continue cooking the sauce for about 1 hour and 20 minutes, stirring frequently to prevent it from sticking to the bottom of the pan.
Once the sauce is cooked, blend the mixture until it reaches a smooth and uniform consistency. Your homemade ketchup is now ready to be served.

Store the ketchup in the refrigerator for up to 4 days. Freezing is not recommended.
