Let’s start preparing these tasty ham rolls by finely chopping all the vegetables by hand or using the electric chopper.
In a pan, put a tablespoon of extra virgin olive oil, the chopped vegetables and a few tablespoons of vegetable broth. We lightly salt and let it simmer, on low heat, for about 5 or 6 minutes.
Take the veal slices and divide them into two or three parts according to their size and put on each a piece of ham and a pinch of aromatic herbs. Roll the slices on themselves and stop them with a toothpick. We keep some aromatic herbs aside to garnish the dish.
In a pan, preferably non-stick, heat a tablespoon of peanut oil and brown the rolls evenly.
At this point let’s move them to the pan where we stewed the vegetables, sprinkle with flour and add some red wine that we will evaporate. We often stir the cooking juices to prevent lumps from forming.
We cook everything for another 3 or 4 minutes and season with salt and pepper.
Finally, add the herbs we had set aside to flavor.
Our ham rolls are now ready to be served.
