First of all, to prepare the Greek salad, we must cut the cheese into cubes and put it in the salad bowl. We wash and dry the tomatoes, then cut them into wedges and remove the seeds. Drain them for a few minutes in a sieve to ensure that they lose the vegetation water.

Then clean the cucumbers and without peeling them, slice them into very thin slices. We peel and cut the onion into very thin rings.

We combine the ingredients with the cheese and complete with the anchovy fillets, previously cut, and the olives.

In a separate bowl, dissolve the salt with the vinegar, add the oil, the ground pepper and emulsify everything with a fork. With the sauce obtained we dress our Greek salad just before bringing it to the table.
