As a first step to prepare our delicious fried pumpkin you have to remove the seeds from the pumpkin and cut the zest. Take out the pulp and cut it into slices about half a centimeter thick.

After doing this, divide the slices into small pieces and pass them in the cornmeal.

Put a large pan on the heat (possibly non-stick and high) and add the sprig of rosemary, garlic and plenty of oil; let it take on flavor for a few minutes over low heat.

Remove the rosemary and garlic, raise the heat so that the oil has not heated up well (the temperature must reach 170 C. degrees).

Place the pieces of pumpkin in the pan and fry them over moderate heat to allow them to cook well even inside; turn them over gently so as not to break them.

When cooked, place the pieces of pumpkin on absorbent paper or paper for frying to absorb the excess grease.

Salt to taste, add a little pepper for a tastier taste and sprinkle with chopped rosemary. Your fried pumpkin will now be ready to serve.
