To prepare our Curry Lamb Chops, start by heating a pan over low heat. Add the chopped onion, garlic, extra virgin olive oil, and a small amount of vegetable broth. Let everything gently simmer for 2–3 minutes until softened.

Next, add the curry powder, tomato juice, and a pinch of salt. Stir well and allow the sauce to cook and develop flavor for another 3–4 minutes.

In a separate pan, heat some olive oil. Lightly coat the lamb chops with flour, then brown them evenly on both sides.

Once the lamb chops are nicely golden, season them with salt and transfer them to the pan with the curried onion sauce. Stir gently and let everything cook together for another 3–4 minutes. Add more salt if needed.

At the end of cooking, enhance the aroma of the curry lamb chops with freshly grated ginger. If you prefer a milder flavor, you can substitute the ginger with grated lemon zest.
