First of all, to prepare the apple cake, we must blend the flour, sugar, salt, lemon zest and oil for a few seconds.

Then divide the egg white from the yolk and combine the latter in the blender, add the yeast diluted in the milk and blend for about 2 minutes.

Pour the mixture into a bowl and gently combine the egg white, previously whipped until stiff, peel the apples, cut them into chunks and distribute them in the mixture. At this point we transfer everything to a pan, previously buttered, of 22 cm in diameter with low edges.

We bake the apple cake in a preheated oven at 180 degrees for about 20 minutes.
