Whisk well, or use a fork, to remove any lumps, then gradually add the remaining water in a steady stream. Mix thoroughly until you obtain a smooth, liquid, lump-free batter.<\/p>\n<p>Cover the bowl with plastic wrap and let the mixture rest for about 5\u20136 hours at room temperature during winter, or 9\u201310 hours in the refrigerator during summer. After resting, use a skimmer to remove the thin layer of foam that has formed on the surface, then stir the mixture again.<\/p>\n<p>Finally, add the 50 g of oil and the salt, give it one last stir, and the batter is ready to be baked.<br \/>\nAt this point, take three baking pans, preferably made of aluminum or copper. If unavailable, you can use non-stick pans with a 32 cm (12.5-inch) diameter. Grease them generously with extra virgin olive oil. Using a ladle, distribute the batter evenly among the three pans. With the help of a fork, smooth the surface so it cooks evenly.<\/p>\n<p>Bake the chickpea flatbread on the lowest rack of a preheated static oven at 250\u00b0C (480\u00b0F) for about 10 minutes. Then move it to the upper rack and continue baking for another 10\u201315 minutes, until it turns golden brown. Remove from the oven and serve while still hot.<\/p>\n<h4>How to store chickpea flatbread:<\/h4>\n<p>It is best enjoyed immediately, but you can store it in the refrigerator for up to 3 days.
