First of all, to prepare the hummus we need to prepare the tahini, so let’s take a non-stick pan and put it on the heat, when hot we toast the sesame seeds, being careful to mix them very often.

We therefore transfer the toasted seeds into a mortar, add 15 g of oil, the salt and crush everything with circular movements, slowly add the rest of the oil and a little water, continue to crush everything until we obtain a mixture with a fairly smooth and homogeneous consistency, the tahini will therefore be ready to be used

Let’s then dedicate ourselves to the hummus, drain and rinse the pre-cooked chickpeas very well and transfer them into a mixer, add the lemon juice, the tahini prepared previously and the oil, the salt and a clove of garlic without of the soul.

We then blend everything and if necessary add 2 or 3 tablespoons of water until we obtain the desired consistency which can be a little smoother and softer or a little denser.

If you want to give a slightly stronger flavor to the hummus you can use a little more lemon juice or oil instead of water, then transfer the hummus into a bowl and serve it garnished with a sprinkling of paprika, a little pepper, oil and finally chopped parsley

You can store the hummus in the refrigerator for up to 3 days closed in an airtight jar

If you don’t have a mortar for preparing tahini, a blender will do just fine.

In addition to the classic ingredients like garlic, tahini and lemon, you can experiment with additional ingredients to create unique variations of hummus. Try adding roasted peppers, pickled sun-dried tomatoes, black olives or basil for an extra pop of flavor

If you want to make your hummus even creamier, you can add Greek yogurt to the mixture during preparation. This will not only increase the texture, but also add a fresh note to the flavor.
